To sustain a colony on Mars, astronauts will eventually need to produce their own food. This makes greenhouses and crop facilities take up the majority of the footprint of the city.
Initially this will be a mostly vegan diet of specially selected crops, supplemented by vitamins and rations sent from Earth. As the colony expands, and further research on the crop production and plant survival has been undertaken, the food variety will increase, and may eventually include certain livestock.
Perhaps one day a Martian steak will challenge the status of Wagyu, although it is likely this would be produced in a laboratory!
